The Tennessee State Legislature instructed the Department of Agriculture to drop the egg license requirement for small egg operations a while back. When this occurred we contacted the Agriculture representative who worked with us to obtain our license. She was clearly unhappy with the change and predicted the egg license would eventually be required again at some point in the future. Until then, she recommended we continue to conduct business following the standards required by the license.
Some time has passed and the license is still not required. It appears the license requirement will not be returning. At our operation we continue to follow the requirements of the license because that process produces a safer product for consumption.
